Slow Cooker Rice Pudding

We love rice pudding in this house especially my husband! I made this recipe in my slow cooker last weekend and it was a hit. I adapted a recipe I had, to make more weight watchers friendly and comes out at a respectable 6 pro points!

This recipe serves 4

10g I cannot believe it’s not butter light

100g Pudding Rice

35g Granulated Sugar

40g Low calorie sweeter

800ml semi skimmed milk

Grated Nutmeg

Put all the ingredients except the spread into a slow cooker and cook on low for two hours

Give the pudding a stir and dot the spread or butter if using around the dish. Cook for another three hours.

We like ours quite thin but if you like it thicker add  another hour to the cooking time.

You can replace the semi skimmed milk for whole milk, the sweetener with more sugar (75g ) and the spread with butter.
